CBF doing anything round the house and the lawn is too wet to mow, so did some cooking.

Mild chili con carne for dinner, with rice. Chucked some mushies in too.

Made some more of those lemon tarts, the old girl scoffs them down with lunch.

Then made some bacon & egg "muffins"

Cook 4 slices of bacon then chop up
Slice 2 spring onions

Beat 6 eggs with a bit of milk and salt and pepper

Put the bacon and spring onions in a paper muffin liner in a muffin tray, pour the egg mix over top, sprinkle with a little grated cheese and cook for 15 at 180 in the air fryer.

makes 6. I take em to work and eat them cold for breakfast

Back from Toc, got the washing on and starting some Bone Broth.

Trying this recipe, sort of. Following the instructions, not all the ingredients. Start it today, leave it on the stove overnight and cook it 12 hours tomorrow.

Bone broth has come up OK, less flavour than i'd hoped. next time I'll make better choices on the bones, maybe throw a couple of bacon bones in as well.

Son and Sharknado not coming tonight, daughter and her ex coming (trying to be friends) so doing a standing rib roast, with roast potatoes and pumpkin, a medley of veges (brussel sprouts, capsicum, onion, zucchini, beetroot) in olive oil and butter and do some steamed greens on the side.

Shout out, if you happen to be near Bundoora (if you don't know where it is, crawl back under your Sth E suburbs rock) call into Bundoora Square, cnr of Plenty and settlement rd and go to Paddy's meats.

Irish butcher shop, Collingwood supporters and the best sausages you're going to find anywhere.

It's in the building with Coles. They also have English/Irish condiments and other stuff and the rest of their meat is damn good.

Mention me, the tall old blonde bastard who needs a haircut and you'll get charged 10% extra.

Making dinner great again. :P

Tonight i'm expecting fambly over, haven't see the little bloke for a couple of weeks.

Doing a brisket in the crockpot, with caramelised onions on top and baby potatoes cooked in the bottom.

On the side some shredded purple cabbage, sauteed with some finely sliced bacon and some butter and olive oil, and some steamed green beans and corn cobettes.

Waiting for a port Arlington potato cake and some grilled fish to munch on the drive home, spent the day laying floating floor boards, nearly finished, and joy, the electrician turned the lights on! Felt like the griswolds!

Laying floating floor is a PITA. I did the back room years ago with a tile look, about 6x9m Took a few days as the room was furnished.

The first day was! These are cushioned waterproof light wood, nice big bits! The bends etc are tricky, I measured and work out the angles, hubby cuts and bangs em together and new concrete and yellow tongue so it’s all dead flat. Only the kitchen and laundry to go now! And it looks great. Taken 3 days so far but doing other stuff too depending on what trades are around.

The potato cake wasn’t bad, different ship, the old one just ain’t got it now!

Energy levels up but can't get outside so doing the washing and cooking.

3 loads of washing, back up to date.

Got a pot of vege soup on simmering with some beans, lentils, broccoli stalks and tomato paste, I'll blitz that with the stick blender shortly.

Got a brisket in the dutch oven cooking in red wine with some celery, onion, garlic, bay leaves and thyme. That's for tomorrow night and/or cold meat for a few days.

Made a vege medley in a casserole dish for tonights dinner. Potato, zucchini, brussel sprouts, capsicum, cherry tomatoes, beetroot, mushrooms, onion and haloumi. mix with olive oil and butter, roast in the oven for about an hour with the occasional stir. Serve with roasted rack of lamb. :wink:

Breaking out the smoker for tomorrow night, and making Pastrami.

Had a Reuben sandwich from a joint next to the vic market and loved it during the week so thought I'd make some.

Got a 2.2kg corned beef on special at Woolies. It's currently soaking in cold water in the fridge to de-salinate it.

Later on, I'll take it out, dry it and coat it with the dry rub I've already made which is mostly ground and cracked black pepper and ground Coriander seed but I've added some mustard seed and powder, onion powder, garlic granules, paprika and some chili.

Let it sit in the fridge overnight in the dry rub, then smoke it tomorrow for 5-6 hours at 220F. Cool and back in the fridge overnight then Monday night steam it gently for 2 hours.

To serve, slice thinly across the grain, pile onto rye bread with mustard, cheese and sauerkraut. Couple of Pickles on the side.

While the smoker is going, dinner tomorrow will be marinated chicken drumsticks, beef ribs, sausages and burgers served with bread and salad.

I was about to make a smart arse comment like go back to the market, but are you saying Pastrami is beef? I thought it was pig? Oh my lord I cane at Pastrami! Hallelujah
